What goes in the bag

One measured cup of beef gravy made from prime-rib pan drippings and a Wondra-flour roux, seasoned with salt.

01

Prepare & package

Use the pan drippings from prime rib to prepare a roux-thickened beef gravy with Wondra flour. Salt to taste. Exact quantities and any additional liquid used in the original batch were not recorded. Cool, measure into 1-cup portions, vacuum-seal, and freeze.

02

Store & thaw

Keep frozen in the sealed 1-cup vacuum bag.

03

Cook or reheat

Place the sealed frozen or thawed gravy bag in the sous-vide bath alongside the meat and leave it until fully hot. Massage the sealed bag carefully to recombine the gravy before opening. If necessary, transfer to a saucepan and whisk gently until smooth.

04

Finish & serve

Serve hot with Prime Rib Roast Slice or another beef dish. Serve generously: gravy is happiness.
