What goes in the bag
Sixteen measured ounces of cooked, skinless white meat removed from Costco rotisserie chickens, left in large pieces and vacuum-sealed plain.
Prepare & package
Break down the cooked Costco rotisserie chicken. Remove the skin, separate the white meat from the dark meat and carcass, remove bones and cartilage, leave the meat in large pieces, weigh 16 ounces per package, vacuum-seal plain, and freeze.
Store & thaw
Keep frozen in the vacuum-sealed measured package. Thaw in the refrigerator or add during controlled cooking when the final dish permits.
Cook or reheat
The chicken is already cooked. Reheat only until fully hot or add late in the preparation of the final dish to limit drying.
Finish & serve
Use flexibly anywhere cooked chicken is needed. Season and finish according to the final dish.
