What goes in the bag
Twelve measured ounces of cooked, skinless dark meat removed from Costco rotisserie chickens, left in large pieces and vacuum-sealed plain.
Prepare & package
Break down the cooked Costco rotisserie chicken. Remove the skin, separate the dark meat from the white meat and carcass, remove bones and cartilage, leave the meat in large pieces, weigh 12 ounces per package, vacuum-seal plain, and freeze.
Store & thaw
Keep frozen in the vacuum-sealed measured package. Thaw in the refrigerator or add during controlled cooking when the final dish permits.
Cook or reheat
The chicken is already cooked. Reheat only until fully hot or add late in the preparation of the final dish to limit drying.
Finish & serve
Use flexibly anywhere cooked chicken is needed. Season and finish according to the final dish.
