What goes in the bag

Deliberately neutral homemade chicken stock made from roasted Costco rotisserie-chicken carcasses and bones with mirepoix, herbs, and a small amount of tomato paste; frozen in measured 2-cup and 4-cup packages.

01

Prepare & package

After breaking down the Costco rotisserie chickens, roast the carcasses and bones. Cook them on the stovetop with mirepoix, herbs, and a small amount of tomato paste over three days. Filter the finished stock three times, cool safely, measure into 2-cup or 4-cup portions, seal, and freeze.

02

Store & thaw

Keep the measured packages frozen. Thaw in the refrigerator or transfer to a suitable pan for controlled reheating.

03

Cook or reheat

Use without dilution. Add directly to a cooking dish when appropriate, or reheat until fully hot.

04

Finish & serve

The stock is deliberately neutral. Reduce, salt, and season according to the final dish rather than correcting the entire batch before freezing.
